I have absolutely loved living on one-dish meals this summer. And salads are always big on my list. The idea of this salad came from one of my favorite You-Tube friends, Christopher Allen. I used his basic idea and then doctored it up to suit me. This is the first time I have ever used the spice, curry, and I love it!
Ingredients:
can chickpeas, drained and rinsed.
Celery
green onions
grapes, cut in half
green apple, diced
mayo
lemon juice
salt and pepper
Curry powder
I have made this several times this summer and I LOVE it. I have gotten brave and used more curry powder each time. It is my new favorite spice. Christopher eats his in a tortilla wrap, but I just like mine in a dish.
What do you think of curry powder?
I've loved curry for years, it's my favorite spice. I also love chickpeas so I plan on making this soon. It looks/sounds terrific!

DeleteI prefer a sweet curry as opposed go the hotter varieties. I use Penzey's Now curry.

DeleteI love curry, but don't believe I've ever tasted a chickpea. Suppose I might substitute a hard white cheese for the grapes and apple?
ReplyDeleteChickpeas are also called garbanzo beans. I would bet any kind of bean would work. Heck, we can make up our own recipe! LOL!

DeleteI've not had curry powder but I have heard of many that rave about it. For some reason It's never been a part of what I cook, but I'm willing to try it. One dish, one bowl, meals are my favorite and a great way to eat whether you are living alone or not.
